The School of Human and Environmental Sciences would like to extend a warm welcome to Ms. Yolanda Jackson and Ms. Julie Plasencia as they join the Department of Dietetics & Human Nutrition.

Yolanda Jackson joined the department as a lecturer this fall and serves as program assistant to the Dietetics Supervised Practice Program. Jackson is a Registered Dietitian and is licensed by the state of Kentucky.  She is an alumnus of the department, where she received a Bachelor of Science in Dietetics in 2008 and a Master of Science in Dietetics Administration in 2012. Jackson’s professional experience includes working as a clinical dietitian and lead clinical dietitian, where she also served as a preceptor for dietetic interns. Outside of the university, Jackson is a member of many dietetics organizations including the Academy of Nutrition & Dietetics and the Kentucky Academy of Nutrition and Dietetics.

Julie Plasencia recently joined the department as an Assistant Professor. Her teaching assignment includes DHN 101: Human Nutrition and Wellness. Plasencia completed her Dietetic Internship with the University of Nevada in 2007 and earned a master’s degree from Michigan State in 2008. She is a Registered Dietitian Nutritionist and is currently working to complete her doctoral program. Her research interests are in diet-related health disparities, particularly in type 2 diabetes and Hispanic populations.  She is also a member of the Bluegrass Academy of Nutrition and Dietetics, the Nutrition and Dietetics Educators and Preceptor Practice Group, Latinos and Hispanics in Dietetics and Nutrition, and the Society of Nutrition Education.
