Professional Profile

Jackie Walters joined Family & Consumer Sciences in 2003, while working as a part-time instructor in the Dietetics and Human Nutrition Program.  She is a Food and Nutrition Specialist for the Expanded Food and Nutrition Education Program (EFNEP) and Food Stamp Nutrition Education Program (FSNEP).  Prior to her work at the university, Jackie administered the Kentucky Cardiovascular Health Program through the Kentucky Department for Public Health, worked as a Child Nutrition Consultant for the Kentucky Department of Education, and served as the Director of Dietetic Services and Director of Unit Administration at Eastern State Hospital.

During the last decade, Jackie has worked to address childhood obesity in Kentucky.  She was a co-author of the Literacy, Eating, and Activity for Preschoolers (LEAP) Program.  She has served as chair of the School Venue of the Partnership for a Fit Kentucky Steering Committee since its formation.  As chair of Kentucky Action for Healthy Kids, she has administered the organization’s expansion to include regional coalitions.  She is also an active member of the Lexington Tweens Coalition, 2012 President-elect for the Kentucky Academy of Nutrition and Dietetics, Team Leader, Accessing Nutritious Foods Initiative, Member, Farm to School Task Force, Co-Author, Kentucky Farm to School Curriculum, and Member, Kentucky Farm to School Resource Manual Writing Team.
