Professional Profile

Yolanda Jackson joined the Department of Dietetics and Human Nutrition in June 2016 as a Lecturer. She also serves as the faculty advisor for the Student Dietetics and Nutrition Association. Yolanda is a Registered Dietitian and is licensed by the state of Kentucky. In the spring 2018 semester, Yolanda introduced Dietetic Simulation to the Medical Nutrition Therapy I course. Clinical simulation gives students experiential learning in an environment where they are safe to make mistake from which they learn and grow. It also helps students to apply knowledge acquired in the classroom.

Yolanda earned a Bachelor of Science degree in Dietetics from the University of Kentucky in 2008 and a Master of Science degree in Dietetics Administration also from the University of Kentucky in 2012. In the past Yolanda was awarded Lyman T. Johnson Torch Bearer (2006), UK Human Environmental Sciences Centennial Future 100 (2007), Outstanding Graduate Student of Excellence from the University of Kentucky Department of Human Nutrition and Dietetics (2010) and was recognized as the Bluegrass Academy of Nutrition and Dietetics Outstanding Dietetic Intern of the Year (2012). She was also recognized as the Bluegrass Academy of Nutrition and Dietetic Outstanding Young Dietitian of the Year (2013) during her first year as a Dietetic Practitioner. In her first year teaching, Yolanda was recognized as a “Teacher Who Makes a Difference” by the University of Kentucky College of Education.

Yolanda’s professional experience includes working as a Clinical Dietitian and as Lead Clinical Dietitian. During her time in the clinical setting, Yolanda worked with patients in the Intensive Care Unit (ICU), Telemetry Unit, Orthopedic Unit, the Wound Care Clinic and the Cardiopulmonary Outpatient Clinic. As a Clinical Dietitian, Yolanda also functioned as community faculty by serving as a preceptor for dietetic interns and an observer for senior dietetic students needing observation hours.

Yolanda is a member of the Academy of Nutrition & Dietetics (AND), Kentucky Academy of Nutrition & Dietetics (KAND), Bluegrass Academy of Nutrition & Dietetics (BGAND). In AND, she is a member of the Nutrition and Dietetic Educators and Preceptors (NDEP) practice group.
